Eastern North Carolina sauce is barely a sauce at all: cider vinegar, pepper flakes and a pinch of sugar, shaken in a jar and left to steep. It cuts through rich pork in a way thick, sweet sauces cannot. Serve it on the side for dunking so the bark stays crisp. The ribs start on a smoker or kettle for color and smoke, then move to a 275 F oven wrapped tight, which frees the grill and guarantees tenderness. Make the sauce a day early; it grows hotter overnight.
