The sign of a well-made schnitzel is a coating that bubbles and lifts off the meat like a loose jacket. That happens when you do not press the crumbs on too firmly and you keep the pan moving, swirling the hot fat over the top as it fries. Potato croquettes are leftover mashed potatoes shaped into balls, crumbed and fried in the same oil. Make them first and keep them warm in a low oven. A few rosemary sprigs on the table add a nice aroma.
