In a traditional Christmas spread the turkey never arrives alone. Little sausages rolled in streaky bacon go around the platter, and the roast potatoes are parboiled and roughed up so their edges shatter. The timing trick is to let the turkey rest for a full 45 minutes while the oven, cranked back up to 425 F, finishes the potatoes and blankets. Rub the bird with sage butter and lay a few bacon strips across the breast for the first two hours to protect it.
