Terracotta holds heat gently and evenly, which is why Mediterranean home cooks slide a clay dish of potatoes into the oven next to a leg of lamb. Here the potatoes start covered, steaming in their own moisture, then finish uncovered to blister their skins. A cast-iron braiser or enameled Dutch oven works just as well if you do not own clay. Before the final stretch, crack each potato open with the back of a spoon so the herb oil seeps inside.
