Cuban Picadillo Empanadas with Lime

Flaky baked empanadas stuffed with Cuban picadillo, ground beef simmered with sofrito, tomato, green olives and raisins, served warm with lime wedges. A Miami bakery-counter favorite.

Stop into a Cuban bakery in Miami mid-morning and you will find a tray of these next to the guava pastries. Picadillo is the everyday Cuban ground beef hash, and it makes an ideal empanada filling because olives and raisins deliver salty and sweet in every bite. Simmer it until the liquid is nearly gone; a wet filling steams the dough from the inside and ruins the flake. A squeeze of lime right before eating cuts through the richness and wakes up the cumin.
