In Greece the everyday gyro is pork, and fries go inside the pita, not next to it. Pork shoulder is ideal: sliced thin and marinated, it browns fast in a hot pan while its fat keeps it juicy. Squeeze the grated cucumber hard before stirring it into the yogurt so the tzatziki stays thick. Warm the pitas with a brush of oil until they puff and blister lightly, which makes them flexible enough to fold without cracking. A parchment wrap around the bottom catches the drips.

Method

  1. Toss the pork with 2 tbsp oil, lemon juice, three-quarters of the garlic, oregano, 1 tsp paprika and 1 1/2 tsp salt. Marinate 2 hours or overnight.

  2. Stir the cucumber, remaining garlic and a pinch of salt into the yogurt and chill.

  3. Heat the oven to 450 F. Soak the potato sticks in cold water 10 minutes, dry well, toss with 1 tbsp oil and salt, and roast 30 to 35 minutes, turning once, until crisp. Dust with the remaining paprika.

  4. Heat a cast iron skillet over high heat. Sear the pork in batches without crowding, 3 to 4 minutes per batch, until charred at the edges and cooked through to 145 F.

  5. Brush the pitas with the remaining oil and warm them in a skillet for 30 seconds per side, until soft and lightly blistered.

  6. Spread each pita with tzatziki, then add pork, tomato, onion and a handful of fries. Fold up and wrap the bottom in parchment to serve.
