Cold roast beef is fine; roast beef that hits a hot, buttered pan for ninety seconds is something else. The thin slices curl and brown at the edges while the middle stays pink and tender, and a dash of Worcestershire gives a savory, almost steak-sauce finish. This is a fast weeknight sandwich built from the deli case. Make the slaw first so it has twenty minutes to relax, and do not crowd the pan; loose piles of meat brown, packed piles steam.

Method

  1. Toss the coleslaw mix with 3 tbsp mayonnaise, the vinegar, sugar and a few grinds of pepper. Refrigerate 20 minutes.

  2. Stir the remaining mayonnaise with the horseradish.

  3. Melt the butter in a large skillet over medium-high heat. Drop in the roast beef in loose, ruffled piles and sear 60 to 90 seconds, until the edges are browned and crisp.

  4. Sprinkle with garlic powder and Worcestershire, turn the piles once and cook 30 seconds more.

  5. Warm the rolls in the same pan for a minute, spread with horseradish mayo and pile in the hot beef.

  6. Serve with the coleslaw in a cup alongside, or spoon some right onto the beef.
