A hinged grill basket is the most underrated tool at a cookout. Load it with a dozen thin steaks, close the latch, and every piece flips in one motion, so nothing overcooks while you chase the last steak around the grate. Sirloin tip, cut from the round, is lean and a little firm, which is exactly why the salty Worcestershire marinade matters. Give it at least four hours. Slice everything thin against the grain and the steaks eat far above their price.

Method

  1. Stir the Worcestershire, soy sauce, oil, pepper, brown sugar, garlic, onion powder and salt together until the sugar dissolves.

  2. Poke each steak a few times with a fork, place in a large bag with the marinade and refrigerate 4 to 12 hours, turning once.

  3. Heat a charcoal grill until you can hold your hand 5 inches above the grate for only 2 to 3 seconds, about 450 F.

  4. Oil the wires of a hinged grill basket, lay the drained steaks inside in a single layer and close the latch snugly.

  5. Set the basket directly over the coals and cook 4 minutes, flip the whole basket and cook 3 to 4 minutes more until the thickest steak reads 135 F.

  6. Unlatch onto a platter, tent loosely with foil for 5 minutes, then slice thinly across the grain and spoon the pooled juices over the top.
