Butterflied leg is the underrated grilling cut: boneless, beefy and big enough for a crowd, yet it cooks in under half an hour. Its uneven thickness is a feature, giving well-done ends for some guests and pink center for others. A yogurt marinade tenderizes gently and caramelizes on the grill, but wipe off the excess so it does not burn. Start it over direct heat, finish over indirect, and always slice thin across the grain. The peppers and onion grill right next to it while it rests.
