This is the one-grill summer dinner: steak, corn and onions sharing the same fire. The trick is timing. Onions go on first because they need the longest, corn follows, and the strips hit the hottest part of the grate at the end. A single compound butter of lime zest, chili powder and cilantro ties everything together. Leave a strip of fat on the steaks and let it render against the grate; that little bit of drip is what gives the corn its smoky edge.

Method

  1. Mash the butter with lime zest, 1 tablespoon lime juice, chili powder and cilantro. Roll into a log in plastic wrap and chill.

  2. Season the steaks with salt and pepper 45 minutes before cooking and leave them uncovered on a rack.

  3. Build a two-level charcoal fire with most coals banked to one side. Brush the onion halves and corn with olive oil and season lightly.

  4. Grill the onions cut side down over medium heat for 10 minutes, then turn and move them to the cooler side. Add the corn and grill 10 to 12 minutes, turning every few minutes until spotted black.

  5. Place the strips over the hottest coals and cook 4 to 5 minutes per side until an instant-read thermometer shows 130 F for medium-rare.

  6. Rest the steaks 5 minutes while you brush the hot corn and onions with some of the lime butter.

  7. Serve each steak with a coin of the remaining butter melting on top, an ear of corn and an onion half.
