Kasap means butcher in Turkish, and these kofte are named for the neighborhood shops that grill them for customers straight from the mincer. The recipe is almost aggressively simple, which is why meat quality and heat matter. Lavash goes under the patties to catch every drip, so do not skip warming it. Blister the tomatoes and long peppers in the same pan after the kofte come out; they pick up the browned bits and give the plate its color. Eat with your hands.
