Doral kitchens know what lime, garlic and oregano do to roast pork, and the same mojo-style marinade works wonders on lamb leg. The citrus acid tames the gamey edge and the cumin leans into it. Poke deep slits and push slivers of garlic right into the meat so every slice gets some. Roasting low for most of the time, then blasting the heat at the end, gives a caramelized, crackly skin. Lay fresh lime wheels over the top for the last twenty minutes; they soften and scent the drippings.
