Platters of small sandwiches disappear fast at any gathering, and these can be built hours ahead without going soggy. A pesto and mayonnaise blend acts as both spread and moisture barrier, so the bread stays soft rather than wet. Homemade pesto takes five minutes and tastes far greener than a jar. Fold the beef instead of laying it flat to give each slider some height, and add a pick before cutting so nothing slides apart on the tray. Cover with a damp towel until guests arrive.
Method
-
Toast the pine nuts in a dry skillet over medium-low heat for 3 to 4 minutes, shaking often, until golden. Let cool.
-
Pulse the basil, pine nuts, Parmesan, garlic and a pinch of salt in a food processor, then stream in the olive oil until smooth. Stir 1/3 cup of the pesto into the mayonnaise.
-
Warm the split rolls on a sheet pan in a 350 F oven for 5 minutes, just enough to soften, then cool slightly.
-
Spread pesto mayo on both cut sides. On the bottoms, layer spinach, folded roast beef, a slice of mozzarella and a few strips of red pepper.
-
Close each slider and push a cocktail pick down through the center to hold it together.
-
Arrange on a platter and serve at room temperature, or cover and refrigerate up to 2 hours.
