One pan, one oven, breakfast for four. Cooked chicken sausage sliced into coins browns fast and gives the skillet a lighter, slightly sweet flavor that works with sage. Start the potatoes first, covered, so they soften before they crisp. Once everything is golden, make shallow wells with a spoon, crack in the eggs and slide the skillet into the oven. Pull it when the whites are opaque but still wobble near the yolk, because the cast iron keeps cooking them on the way to the table.
Method
-
Heat the oven to 400 F. Heat the oil in a 12-inch cast-iron skillet over medium heat, add the potatoes and 1/2 tsp salt, cover and cook 8 minutes, stirring once.
-
Uncover, raise the heat to medium-high and cook until the potatoes are browned on several sides, 8 to 10 minutes.
-
Add the sausage coins, shallot and sage and cook, stirring occasionally, until the sausage is browned at the edges, 5 minutes.
-
Make 6 shallow wells with the back of a spoon and crack an egg into each. Season the eggs with the remaining salt and the pepper.
-
Bake 8 to 10 minutes, until the whites are set but the yolks still soft.
-
Scatter the oregano leaves over the skillet and serve straight from the pan.
