Real tandoori chicken relies on a clay oven hotter than any home kitchen, but a double marinade and a blazing broiler get you most of the way. First comes lemon, salt and chili to season to the bone, then a thick yogurt paste with garam masala, ginger and garlic that chars at the edges. Removing the skin and scoring the meat lets the marinade in. Kashmiri chili powder brings the famous red color without too much heat.
