The blade keeps the dark hammer marks from the forge, with a bright ground edge along the bottom. Its weight does most of the work, so a short controlled drop cleaves through chicken spines, lamb neck and baby back racks without a hacking motion.
Walnut scales are pinned to a full tang that ends in a steel ring for hanging on a hook or rail. Keep the edge a little thicker than a chef knife, never use it on frozen bone, and oil the carbon steel after washing.
