This is a skewer grill in the style of a street-side kebab stand. The long, narrow firebox holds a deep row of lump charcoal, and the rails along the top support shish kebab, suya or pinchos laid straight across, with no grate needed.
Vent holes low on the sides feed air to the coals, and a side shelf keeps a bowl of basting sauce within reach. Add a flat grate across the top and it cooks burgers too. Scrape out ash between cooks so the vents stay clear.
