Tampa and Miami have argued over the Cubano for generations, but the core is the same: roast pork, ham, Swiss, pickles, mustard and Cuban bread, pressed hot. What makes it memorable is the pork. A long marinade in mojo, sour orange with loads of garlic, cumin and oregano, then a slow roast until sliceable but tender. Slice the pork thin, layer cheese on both sides so it glues everything together, and press firmly but patiently. Leftover pork freezes well for the next batch.
