Halloumi is the salty cheese that grills without melting, and it is a natural partner for thick slices of fried ham. Both want a hot, dry pan so they get a golden crust fast. Slice the halloumi about 1/2 inch thick and pat it very dry, or it will squeak and spit. Do not salt anything on this plate; ham and halloumi bring plenty. A squeeze of lemon over the cheese just before serving makes a big difference. The beans simmer while everything else cooks.

Method

  1. Warm the beans in a small saucepan over low heat, stirring now and then.

  2. Heat a large nonstick skillet over medium-high with no oil. Sear the ham slices 2 minutes per side until browned at the edges. Move to warm plates.

  3. Pat the halloumi dry. Add the olive oil to the skillet and fry the cheese 90 seconds per side until golden. Squeeze the lemon over it in the pan.

  4. Lower the heat to medium, add the butter and fry the eggs until the whites set, about 3 minutes, then crack pepper over them.

  5. Toast and butter the bread and cut it into fingers.

  6. Arrange the ham, halloumi, egg, a mound of beans and the toast on each plate.
