Garlic parmesan wings are the ones kids and hot-sauce skeptics fight over. The sauce is not really a sauce: melted butter with a lot of garlic, poured over hot wings and immediately showered with parmesan so it melts into a savory crust. A little black pepper and lemon zest keep it from feeling heavy. Roast the wings and fries on separate racks in the same hot oven, swapping positions halfway so both get crisp at the same time.
