Nam tok means waterfall, a nod to the juices that run from the steak as it comes off the grill in northeastern Thailand. The steak is dressed while still warm so it drinks up the sour-salty dressing. Khao khua, rice toasted in a dry pan and ground, is the secret ingredient: it adds a nutty crunch that no store-bought garnish can match. Make a big batch and keep it in a jar for weeks. Serve with sticky rice and raw cabbage wedges.
