Real Japanese teriyaki is not a bottled marinade but a glaze: teri means shine, yaki means grilled. The chicken is cooked plain first, then brushed with a reduction of soy, mirin, sake and sugar during the last few minutes so it gets glossy without burning. Leaving the skin on and weighting the thighs flat on the grill renders the fat and turns the skin crisp. Slice across the grain before plating so the glaze runs into every cut.
