Acacia is hard enough to resist deep knife scars but kind to a blade, and its warm striped grain looks good leaning on the counter between uses. The set pairs a large board for breaking down a whole chicken with a slimmer one for slicing sausage and cured meats.
Both have a rounded handle with room to hang them on a hook. Rub them with food-safe mineral oil once a month, never soak them, and keep one strictly for cooked food so raw juices never cross over.
