Cast iron is slow to heat and slow to cool, which is exactly why it sears well: a cold steak barely dents its temperature. This 10-inch skillet has a long handle with a hanging loop, pour spouts on both sides and a smooth-milled cooking surface.
We use it for smash burgers, reverse-seared strip steaks and cornbread baked in bacon fat, and it goes right onto campfire coals. It arrives seasoned with vegetable oil. Scrub with hot water, dry over a burner and wipe on a thin film of oil.
