When rain cancels the grill, this pan fills in. Its tall ridges lift the food above rendered fat, so a pork chop sears in stripes instead of stewing, and the square shape fits four chicken thighs or a couple of skirt steaks with room to spare.
The body is enameled cast iron and the handle is beechwood on a steel collar, so it stays cool on the burner but should not go in the oven. Heat it for five minutes before the meat goes on. Brush the grooves clean while the pan is still warm.
