Precooking potatoes before they meet the grill removes the guesswork. The inside is already fluffy, so the grate only has to add char and smoke. That makes them a flexible partner for grilled bratwurst, fresh chorizo or butterflied chicken, because they can wait at the cool edge of the grill until the meat is ready. Choose medium red or gold potatoes about 3 inches across. Larger ones crumble when halved, and smaller ones are fiddly to flip with tongs.

Method

  1. Simmer the whole potatoes in salted water for 20 to 25 minutes, until a skewer slides in easily. Drain, cool for 10 minutes and halve each one lengthwise.

  2. Melt the butter with the garlic in a small pan over low heat for 2 minutes, then stir in the olive oil and pepper.

  3. Heat the grill to medium-high, about 425 F, and scrape the grates clean.

  4. Brush the cut sides generously with garlic butter and set them cut side down on the grate. Leave them alone for 5 to 6 minutes, until deeply marked and they release on their own, then flip, brush the skins and grill 3 minutes more.

  5. Arrange on a plate, spoon over any remaining garlic butter and finish with the chives and flaky salt.
