The lasagna of Emilia-Romagna is less about mountains of mozzarella and more about balance: many thin layers, a spoonful of ragu and bechamel on each, and enough parmesan to tie it together. The result slices into neat, tall wedges that show every stripe. Make the ragu a day ahead; it thickens overnight and the assembly goes faster. If you cannot find fresh sheets, no-boil dried noodles soaked 5 minutes in hot water behave almost the same. A little mozzarella on top gives that melted finish.
