Bossam is Korean kimjang food, the pork families eat on the day they make winter kimchi. Simmering the belly with soybean paste and a spoon of instant coffee sounds odd, but both mask any porky funk and tint the meat a gentle tan. The result is soft rather than crisp, which is the point: it slices clean and melts against sharp kimchi or salted shrimp. Let the slab cool for 10 minutes before cutting so the layers hold together, and save the broth for the table.
