Pide shops in Turkey bake these in wood-fired ovens at blistering heat, but a pizza steel or an overturned sheet pan heated for 45 minutes gets you close. Kiymali pide is the classic ground beef version; adding a little kasar or mozzarella makes it kasarli kiymali, a crowd favorite. The dough is a simple, soft yeast dough, and the folded edges get pinched at each end to form the boat. Brush the crust with butter as soon as it comes out.
