Spiral-cutting a sausage is a butcher-counter trick that does two jobs: more browned surface and faster, more even cooking. Slide a skewer lengthwise through each link, then roll it against a knife held at an angle. Pull the skewer out and stretch gently to open the spiral. The cuts also stop the casing bursting. Start them in a pan with a splash of water to cook through, then let the water evaporate and the fat do the browning. Garlic toast mops up whatever renders out.
